Peanut Butter Ribbon

A nice creamy peanut butter ribbon that has a snap when frozen but melts quickly, designed specifically for ice cream.

Ingredients

  • 1/2 Cup Peanut Butter (Smooth and the non natural kind that separates)

  • 2 Tbsp Coconut Oil (Refined or the coconut flavor comes through, which can be ok)

Instructions

  1. Mix both ingredients in a bowl

  2. Warm slightly in the microwave to melt the coconut oil and mix thoroughly 

  3. Place in a jar and store at room temp until ready to use in ice cream

Note: If solid at room temperature, simply warm in the microwave for 10+ seconds and stir

This ribbon has a similar feel to magic shell and will freeze quickly on ice cream, I wouldn't recommend adding it directly to the mixer as it will mix in before it freezes. Add it as you remove the ice cream from the maker and wait for it to freeze before layering more ice cream and ribbon.
This can be stored at room temperature and warmed slightly to remix if it separates and used as a topping as well.
