Orange Curd

Orange curd is a citrusy swirl of tangy sweetness, adding a bright and velvety burst of flavor

Ingredients

  • 2 Eggs

  • 2 tsp Orange Zest (Packed)

  • 100g Orange Juice

  • 200g Sugar

  • 100g Corn Syrup

  • 1 1/2 Sticks Butter | 3/4 Cup (Cut into smaller cubes 1-2Tbsp in size)

Note: You will need an instant read or candy thermometer for this recipe

Instructions

  1. Prepare a double boiler (a large pot with a smaller saucepan or pot inside floating in a couple of inches of water)

  2. Boil the water and add the ingredients minus butter to the pan

  3. Stir constantly and heat the curd to 175 degrees F.

  4. Remove from the heat and add the butter stirring until it is melted in

  5. Place in a glass container and store in the fridge until ready to use (metal and citrus don't mix well, think orange juice out of a metal container)
